Ingredients: 1 cup thinly sliced fennel, I used bulb and some of the stems; 3 cups thinly sliced Iceberg lettuce; 3 ounces Genoa salami; 1/2 cup diced smoked ham; 1/4 cup grated Parmesan cheese; 2/3 cup extra sharp cheddar cheese; 2 diced apples, I used red delicious apples; 2 tablespoons lemon juice; 1-1/2 tablespoon saffron infused oil, see my recipe with same name; 1 teaspoon dill weed; to taste whole leaf oregano; to taste basil; to taste salt; 1 tablespoon chopped parsley; to taste ground black pepper; to taste your favorite salad dressing, I used apple cider vinaigrette by Kens Steakhouse; 2/3 cup green stuffed olives; 1/2 cup pinenuts

Steps

Slice the salami thinly. Add lemon juice to fennel and apples to keep from turning colors.

Mix all the ingredients. Dress with your favorite salad dressing

Toast the pine nuts. Add them as topping.
