Homemade Egg Flan in a Pressure Cooker

Beat the eggs and sugar together until well mixed. Don’t overbeat; just combine them so the mixture doesn’t get too much air.

Add the milk and mix until combined.

Pour caramel into a mold or flan pan that fits inside your pressure cooker, spreading a little up the sides. You can buy caramel or make it easily. If your flan mold has a lid, use it. If not, cover the entire mold tightly with aluminum foil to seal it well, since the pressure cooker will have water and you don’t want any to get in.

Pour about 1 1/2 inches of water into the pressure cooker, or enough to come halfway up the side of the mold.

Close the pressure cooker and heat on high until it reaches full pressure. Once it starts to whistle, lower the heat to the minimum and cook for 15 minutes. Release the pressure, remove the mold, and let it cool to room temperature. Then refrigerate for at least 5 hours. After that, you can unmold the flan. Enjoy!
