Stir fry egg noodles

This was an easy yet fun to do recipe for my anything -homemade-obsessed self! The egg noodles were made from scratch & then cooked.

Stir fry egg noodles
This was an easy yet fun to do recipe for my anything -homemade-obsessed self! The egg noodles were made from scratch & then cooked.

Steps

Add flour and salt into a large bowl. Make a well in the center

Crack eggs in to the well and gradually incorporate flour into eggs using a fork

Put dough on a floured surface and knead. Add little amount of flour when it turns sticky

Knead until smooth and firm. Wrap in a plastic wrap and chill for 25-30 minutes

Divide dough into two and work with one at a time.

Roll out dough to be very thin. Using a sharp knife or a pizza cutting wheel, cut into even thin stripes (thinner than mine if possible)

Parboil in salted water

Add oil into a non-stick pan on moderate heat, toss finely chopped garlic in

Add in carrots, stir fry for a minute or 2. Add in onions, scotch bonnet & tomatoes. Stir fry on moderate heat

Put spices and season to taste. Add a little water (or stock if available)

Add in parboiled egg noodles, stir fry for 2-3 minutes. Add fried beef chunks. Turn heat down and cook for a minute or two.

Serve hot and enjoy with chilled drink of choice!
