Ingredients

  1. 3 1/3 lbsglutinous rice (about 1.5 kg)
  2. 2 1/4 lbssugar (about 1 kg)
  3. 4 1/2 lbscoconut milk (about 2 kg)
  4. Butterfly pea flower water for soaking the rice
  5. Coconut milk for drizzling
  6. Ripe mangoes, as desired
  7. 1 lbcoconut milk (about 0.5 kg)
  8. 1 teaspoonsalt
  9. 1 1/2 teaspoonscornstarch

Cooking Instructions

    Soak the glutinous rice in butterfly pea flower water for 2-3 hours.

    Steam the glutinous rice until fully cooked.

    In a pot, heat the coconut milk and stir in the sugar until dissolved.

    Add the steamed glutinous rice to the pot with the sweetened coconut milk. Stir well and let the rice absorb the coconut milk.

    To make the coconut sauce, heat the coconut milk in a pot, add salt and cornstarch, and stir until thickened. This will be used for drizzling over the rice.

    Once the rice has absorbed the coconut milk, serve with ripe mangoes and drizzle with the coconut sauce as desired.
