Mango sticky rice oats

Mango sticky rice inspired oats, 2 ways! The overnight method gives you more of a bite/chew, while the stovetop method gives a more sticky texture and is closer to the actual dish. Both are great, but I especially love the stovetop version!

Stove top:

In a pot, mix together the coconut milk, water, sugar, and salt over low-medium heat. Once dissolved, take out about 3 tbsp of liquid for the sauce. Pour in the oats and simmer until most of the liquid is absorbed.

To the reserved liquid, mix in the cornstarch and microwave for 30 seconds or until you get a thick enough consistency. This will be the sauce we pour on top.

Once the oats are cooked, plate with your sliced mango pieces. Drizzle the sauce on top and sprinkle on some black sesame seeds. Enjoy :)

Overnight:

Mix in all of the ingredients except the mango and let sit overnight in the fridge. Top with mango pieces and sesame seeds. Enjoy :)
