Wash the scallion greens, chop finely, and sauté in oil.

Wash the herbs thoroughly and let them dry completely.

Heat the vegetarian braised 'pork' in a skillet and adjust the seasoning to your taste. I like it spicy, so I add a little ground pepper.

Lay out the banh hoi sheets, brush with a little scallion oil, add some fresh herbs and vegetarian 'pork', then roll up. Repeat until all the banh hoi is used.

To make the sweet and sour dipping sauce: Mix 1 1/2 tablespoons vinegar, 2 tablespoons sugar, and 1 1/2 tablespoons vegetarian fish sauce. Whisk together, then add minced garlic (if desired) and chopped chili.

Arrange the rolled banh hoi on a plate, brush with a little scallion oil, and sprinkle roasted peanuts on top. Serve with the sweet and sour dipping sauce.
