If you can't find the traditional cheeses, you can substitute with similar cheeses available to you.

In a pot, combine the water, piloncillo, cinnamon sticks, and cloves. Cook over medium heat until it forms a syrup, then set aside.

Preheat the oven to 350°F (180°C).

Slice the bread and melt some butter. Spread butter on both sides of each slice, place them on a baking sheet, and bake for 10 minutes.

Grease a baking dish with butter. Arrange a layer of bread, drizzle with the syrup, and sprinkle with peanuts, walnuts, and raisins.

Repeat the layers, and finish by sprinkling the cheeses on top. Make sure the bread is well soaked with the syrup.

Bake for 20 minutes at 350°F (180°C). Remove from the oven, let cool to room temperature, refrigerate, then serve and enjoy.
