Ingredients

25 minutes
6-7 servings
  • 2 cupsBlack Eyed Beans or Lobia
  • 1 tspSalt
  • 2 tbspOil
  • 2-3Green chillies finely chopped
  • 1Onion finely chopped
  • 1/8 tspAsafoetida
  • 1 tbspChana Masala
  • 1 tspRed chilli powder
  • 1 tspDry Mango powder or Amchur
  • 1 tspCumin powder roasted
  • 1small bunch Coriander Leaves finely chopped
  • FOR THE POTATO PATTIES-
  • 2-3Potatoes boiled and mashed
  • 1 tspSalt
  • 1/2 tspDry Mango powder or Amchur
  • 1 tspBlack pepper powder
  • 1 tspChat Masala
  • 1small bunch Coriander Leaves finely chopped
  • 2-3 tbspOil for shallow frying
  • 1/2 cupSev
  • 1/2 cupBoondi
  • 1/2 cupCurd beaten
  • 1/2 cupDates Chutney
  • 1/2 cupPeanuts roasted
  • 1 tspChat Masala
  • 1 tbspLemon juice

Steps

25 minutes
  1. 1

    Soak Beans overnight for the best results. Boil with a little Salt until done. Do not over boil them. They get done very quickly. Keep aside. In a pan, heat Oil and add Asafoetida, Green chillies and chopped Onion. Saute them nicely until done. Now add the rest of the ingredients mentioned under it's making. Add boiled Beans to it. Cover and simmer for two more minutes.

    For the Potato Patties, mix everything well and shape into round tikkis or patties. Shallow fry few at a time in batches on a low heat. Keep them aside after all get done.

    For serving, place 2 patties on a plate. Spoon about 2-3 ladleful of the Black Eyed Beans Ragda on them. Further top up with Chutneys and other ingredients whatever are handy. Serve immediately with some generous sprinkle of Chat Masala. Lemon juice can be squeezed on top or else add some dry Anardana powder too. Or serve it just like that as we have already used Dry Mango powder or Amchur liberally. Enjoy!
