Ingredients

  1. 4 1/2 lbseggplant (about 2 kg)
  2. 2 1/4 lbsground beef or lamb (about 1 kg)
  3. 1 bunchparsley
  4. 2onions
  5. 1 tablespoonred pepper flakes
  6. 1 tablespoonsweet paprika
  7. 2 tablespoonssalt
  8. 1/2 cupvegetable oil (120 ml)
  9. 2 tablespoonstomato paste
  10. 2 cupswater (480 ml)

Steps

    Wash the eggplants and slice them into rounds.

    Wash the parsley and chop it finely. Finely chop the onions as well. Add the ground meat, spices, and a little oil, then mix everything together.

    Grease a baking dish with oil. Shape some of the meat mixture into balls and alternate them with the eggplant slices in the dish. In a cup, mix the tomato paste with water, then pour it over the eggplant and meat. Sprinkle with a pinch of salt.

    Place the dish on the stovetop for 15 minutes, then preheat the oven and bake until golden brown.
