Pempek Dos - Indonesian fish cake (without fish)-Vegetarian friendly

Pempek is one of the food I really missed when I move here. There are two ways to enjoy them. Some people steamed it, some people fry them:) I prefer to fry as I love the texture. You can eat it just like that, but usually if you buy this in my country, it would be served with bit of egg noodle and sliced cucumber. This recipe does not include the sauce (recipe) , I will do one later.
Note: if you freeze this, dont forget to thawed before frying it, take out the night before.

If you do try, hope you enjoy it as much as I do 😉

    2. In a pan, without turning the heat - mix together no1 with the flour. This can be use with wooden ladle or spatula. When it's all mixed, smooth and turn like a batter. turn the stove to medium and continue stirring using wooden stick or spatula till all looks a bit like a sticky and doughy. This should take about 5 minutes. Turn the heat off.

  4. 4

When the dough mixed, start pouring half part of the tapioca, mixed well but slowly. And do the rest. Repeat. You can now make the dough into shape. Use tapioca flour in your hand if need it, as the dough can be a bit sticky. Make either long cylinder or a ball shape. Fyi: the cookie shape is NOT normal, but I like it as I prefer to have more crispy texture when fried (google pempek for more type or shape).

  7. 7

Note: to keep in fridge, I usually used a bit of oil, just so it does not stick together, this is optional. If you want to freeze, simply put per portion in a plastic.

Whether it's a spoonful of sugar or a handful of cabe (chillies), it can only make your food (or live) more exciting. The little Indonesian girl in me reminisces about the spicy flavors of home. Dishes such as Nasi goreng and rendang, transport me 7000 miles back to my home in Jakarta.Arriving in UK, I felt lost. Finding foods that I missed could be quite a challenge. That’s when my culinary journey started. It's far from perfect, and just a guide, use and make them your own. I hope it would help you, as it help me.
