Steps

Clean, wash and soak the deals, rice in enough water for 5-6 hours.

Drain and keep aside in a jar blend the deals,rice to a smooth paste.

Transfer the mixture in to a bowl, add dahi and mix well. Cover the lid and keep aside to for ferment 6-8 hours.

Add Dudhi, oil, lemon juice, sugar, soda, chilli powder, haldi powder and chilli paste, salt and mix well.

Heat oil in a pan add the mustard seeds, til, hing and saute for few seconds.

Pour the batter evenly to make a thick layer.

Cover with a lid and cook on a low flame to 7-8 minutes, when the base turns golden brown in colour and crisp.

Lift the handvo using a large spoon and turn it over to the other sides.

Cover and cook on a low flame for 5-8 minutes.

Cool slightly and cut into squares pieces.

Serve the handvo with green chutney.
