Beef Meatballs in Spanish Sauce

For this recipe, I bought pre-made meatballs, but I usually make them myself by mixing the ground beef with parsley, garlic, black pepper, and salt. Then, I form the mixture into balls and coat them in flour or breadcrumbs.

Fry the meatballs and set them aside in a Dutch oven or clay pot.

FOR THE SAUCE: Remove some of the oil, leaving just enough to cover the bottom, and add the chopped onion and carrots. Add the bouillon cube and a little salt.

When the vegetables are slightly softened, add a level tablespoon of flour.

Stir well and add enough broth or water to cover. Let it simmer for 10 to 15 minutes. If the sauce gets too thick, add a little more water.

Pass the sauce through a food mill over the meatballs and heat everything together for a bit.

This sauce works well for many other recipes.
