Uttapam is a very common breakfast food from South India and is made using fermented lentil and rice batter with vegetables as topping. It is served with chutney and sambhar.
Whenever I prepare batter to make idlis and dosa, uttapam goes side by side as you can use the same batter for all these dishes.

Grease the tawa and heat. Set the flame to low and pour the batter on tawa, top up with the vegetables.

Flip it to the other side applying ghee when base is firm, cook until veggies are cooked on low to medium flame.

Sprinkle grounded black pepper and black salt, Serve hot with sambhar and chutney.
