Words cannot adequately describe the taste of these yam balls. I do not like the taste and smell of raw blended pepper mix. So I improvised years ago and have since lightly cooked it. It actually makes a huge difference. Another advantage is that the cooking process soaks up the excess liquid from blending or pounding which will otherwise make the yam soggy and subsequently oily when fried.

Ingredients

  • Yam
  • Blended pepper mix
  • Seasoned and cooked minced meat
  • Seasoning
  • Spices
  • Eggs
  • Vegetable oil
  • Slicesonion

Steps

  1. 1

    Peel, cut and wash yam. Transfer to pot.

  2. 2

    Add water and salt. Put on heat source.

  3. 3

    Add blended pepper mix (red bell pepper, scotch bonnet and onions) into a sauce pan.

  4. 4

    Put on heat source.

  5. 5

    Add in spices and seasoning. Stir.

  6. 6

    Add in seasoned and cooked minced meat. Stir properly.

  7. 7

    Turn off heat source and set aside to cool.

  8. 8

    Meanwhile, drain and mash cooked yam.

  9. 9

    Add in minced meat sauce and stir properly to combine.

  10. 10

    Shape yam into balls and set aside on a tray.

  11. 11

    Break eggs. Add in seasoning and spices. Whisk.

  12. 12

    Put vegetable oil in a deep pan. Add in slices of onion. Allow the oil to heat up to medium high.

  13. 13

    Dip yam balls in whisked eggs. Gently coat them with the aid of a fork or a spoon.

  14. 14

    Transfer each egg coated ball immediately into oil.

  15. 15

    Turn balls around for even frying.

  16. 16

    Transfer to a colander after desired brownness is achieved.

  17. 17

    Transfer to a paper towel/kitchen tissue lined dish or food flask.
