Make a thick batter with Curd and Semolina. Add salt to it. In a pan, heat oil and crackle some Mustard Seeds. Add Curry Leaves and Green Chillies next.

Followed by grated Ginger and Coriander Leaves. Mix well and add this tempering to the Idli batter. Mix well and set aside. In a vessel, heat about 2 to 3 cups of water.

Grease the Idli plates, place a fried cashew on each. Add the Eno fruit salt just before steaming the Idlis. Give a light stir and add a ladleful of batter in each depression of the Idli plate. Steam these for about 18 to 20 minutes on a medium high heat to high heat.

Do not open the lid immediately. Take some time to take them out from the plates. Serve them hot with Peanut Chutney or Coconut Chutney for a healthy wholesome breakfast.
