Ingredients

  1. 1/2 cupplain yogurt (125 ml)
  2. 1 quartwhole milk (1 liter)
  3. sugar to taste

    Heat the milk in a pan (it should reach 140°F; if you don't have a thermometer like me, check with your finger—if you can hold it for 10 seconds, it's ready). Be careful, it shouldn't be lukewarm or boiling. While waiting for it to heat, stir with a spoon to prevent sticking, and if you want to add sugar, now is the time.

    Once it reaches the right temperature, turn off the heat and add the plain yogurt, mixing well.

    I use the yogurt cup as a measure; before it's finished, I fill it with the yogurt I made and use it to make more.

    Finally (once mixed), place it in a glass or plastic container. Put it in a warm place, like the oven, covered with some cloths.
