Steps

Place potatoes in large pot with salt and enough milk just to cover. Bring to low simmer and continue to cook uncovered, stirring occasionally, until potatoes are tender (15 minutes or so.)

Drain off and reserve milk.

Mash, adding reserved milk a little at a time until potatoes reach the desired consistency.

Stir in butter and parsley.
