Ingredients

  1. 1 lbdiced steak meat
  2. 1red bell pepper
  3. 1poblano pepper
  4. 1large shallot; large julienne
  5. 3 clovesgarlic; slivered
  6. 9.5 ozDona Maria mole
  7. 1/2 tcayenne
  8. 1 Tcinnamon
  9. 1/4 Cwhite vinegar
  10. 1 Cshredded chihuahua cheese
  11. 4 Carugula & spinach blend
  12. as neededkosher salt & black pepper

Steps

  1. 1

    Remove steak from fridge 1 hour before cooking.

  2. 2

    Heat a large saute pan until very hot, but not smoking.

  3. 3

    Add steak. Season. Cook very briefly until nearly rare and set aside.

  4. 4

    Add veggies and garlic. Season with salt and pepper. When veggies are nearly tender, add steak. Saute 30 seconds.

  5. 5

    Add 1 T mole and 1 T water. Toss and stir. Cook 1 minute.

  6. 6

    Place remaining mole in a small sauce pot. Add cinnamon, cayenne, and vinegar.

  7. 7

    Add to a large mixing bowl with greens and a pinch of salt pepper.

  8. 8

    Quickly toss salad and plate. Garnish with cheese.
