A simple taste of the Mediterranean! Easy to make you just need to make sure your bread is super toasted with lots of mild olive oil and garlic rubbed all over. This is part of my starter / appetiser collection to go into my new cook book!

A simple taste of the Mediterranean! Easy to make you just need to make sure your bread is super toasted with lots of mild olive oil and garlic rubbed all over. This is part of my starter / appetiser collection to go into my new cook book!

Chop up your tomatoes it’s up-to you if you want to deseeded them! Sprinkle them with salt in a bowl and set aside for 10 minutes for the extra liquid to release.

Slice the bread into thick slices, you can make it as a whole slice or little appetisers. Rub with oil.

Heat a griddle on a high heat. Toast the bread so it’s nice and crispy.

Rub the toast with garlic and extra oil.

Empty the liquid from the tomatoes, mash them up a bit shred the basil, add the vinegar and mix well.

Now add the tomatoes to the toast and top with any additional toppings you like or eat as it is! Enjoy!
