Qorma is a traditional dish in every Muslim household and has the Mughlai lineage to it's preparation. Mughals always did everything with a splendour and this particular curry has lots of nutty ingredients and yoghurt that adds richness and creaminess to the dish. It is made throughout Uttar Pradesh, Delhi and Indian City of Hyderabad. All the Mughlai dishes are rich in fats, carbohydrates and proteins. Hence it is the most loved by everyone and is a must on menu on important occasions like Eid etc.

Ingredients

40 minutes
6-7 servings
  • 1 1/2 kgChicken Bone-in
  • 2 tbspGinger garlic paste
  • 2 tspSalt or to taste
  • 3-4Green Chillies finely chopped
  • 1 tbspRed Chilli powder
  • 1 tspTurmeric powder
  • 1/4 cupCoriander Leaves finely chopped
  • 1/4 cupMint Leaves chopped
  • 1 tspGaram Masala
  • 400 gmYoghurt beaten well
  • 1/4 cupOil
  • FOR THE QORMA PASTE -
  • 1/4 cupDry Coconut roasted
  • 1/4 cupPeanuts roasted
  • 3 tbspCharoli Seeds
  • 3-4Onions thinly sliced and fried
  • 12Cashewnuts
  • WHOLE SPICES -
  • 1Cinnamon stick
  • 3Cardamoms
  • 4-5Cloves
  • 1 tspCaraway Seeds
  • 1Star Anise

Steps

  1. 1

    Make a paste of all the ingredients listed under Qorma paste at first. Marinate Chicken with all the rest of the ingredients mentioned except Coriander and Mint Leaves plus the whole spices.

    Set aside for an hour. Heat oil in a cooking pot and add in the whole spices like Cinnamon, Cardamom, Caraway seeds, Cloves and Star Anise.

  3. 3

    Now add the Qorma paste to it. Saute it for about 10-12 minutes and then add the marinated chicken to it and allow it to cook on a low heat with a lid on until done for almost 25 minutes or accordingly.

  4. 4

    There is absolutely no need of any water as there is yoghurt in it and as such it leaves a lot of water. Cook until a desired consistency is obtained of one's own choice. The Qormas are generally thick with juicy succulent pieces of meat.

    Garnish with chopped Coriander and Mint Leaves. Serve it hot with Naans or Hyderabadi Baghara Khaana.
