Beef Stew with Vegetables and Yucca (My Family's Recipe)

Chop the onion, garlic, green bell pepper, and tomato into small cubes and set aside.

Heat about 5 teaspoons of oil and sear the meat. Brown it for one minute on each side. Once done, remove with a slotted spoon and set aside.

In the same pot, add the sautéed mixture (garlic, onion, bell pepper, tomato) and let it cook well. Then add the sliced carrot, meat, oregano, and cumin, and sauté a little.

Now add hot water and let it boil for 40 minutes in a regular pot or 20 minutes in a pressure cooker on medium-low heat once the pressure indicator rises.

Add the remaining vegetables (mushrooms, zucchini, and yucca/potatoes). I prefer yucca and cilantro/parsley. Adjust the salt and let it boil for 20 minutes in a regular pot or 10 minutes in a pressure cooker once the pressure indicator rises.
