When you want a quick and healthy appetizer, bruschetta is a lifesaver. And if you use avocado, you’ve hit the jackpot!

Squeeze the lime and set the juice aside.

Cut the avocado lengthwise, twist to open, and remove the pit. Scoop out the flesh with a spoon. Cut it into pieces and place them in a tall cup for an immersion blender. Add the lime juice right away to keep the avocado from browning and to maintain its bright green color. Blend until smooth. Note: If you prefer, you can mash the avocado with a fork instead of blending.

Toast the bread. Meanwhile, add the olive oil, salt, pepper, and torn mint leaves to the avocado mixture. Mix well.

Wash, trim, and slice the radishes.

Assemble the bruschetta: spread the avocado mixture on the toasted bread, top with radish slices, and garnish with mint leaves and a grind of pepper (optional). (I also added chia seeds!)
