I make these with the junior chefs at college with homemade buns and burger sauce

Sweat down the chopped onion until translucent and without colour

Put the ketchup, Dijon, Worcester, coriander and salt and pepper in a bowl, add the mince and egg and mix well.

Depending on how wet and how ground your mince is, add dried breadcrumbs but not too much (I use about 1 handful)

Shape them into patties using wet hands. You can weigh them at 125g or 65g for sliders
