Ingredients

  • 1mozzarella (basil infused)
  • Handfulcherry tomatoes
  • Breadcrumbs for top
  • Olive oil to sprinkle
  • 6 sliceswhite toast bread
  • Bèchamel
  • 50 gbutter
  • to tasteSalt
  • Halfcup all purpose flour
  • Juice of half lemon
  • 100 mlheavy cream
  • For top
  • Fresh basil

Steps

    Make a thick beautiful bèchamel, be careful not to burn it, so stir often. You do like this: melt the butter in a pan and add a little milk and the flour. Then when it's all nicely incorporated, add the heavy cream, salt, lemon juice and rest of the milk. Stir it and watch it carefully until it thickens. Then take off from heat

    Assemble your bread slices in a cake mold, layer by layer, first bread then bèchamel, then bread and finish with bèchamel.

    Make a well in the middle and put the mozzarella in it. Top should be a bit visible. Cut the tomatoes in slices and arrange on top.

    Add fresh basil on top, then breadcrumbs, drizzle with olive oil

    Up in the oven, i used gas, level 6,till breadcrumbs golden.

I like to discover new spices and ideas.i never try to follow the "official" rules in cooking, but rather my main ingredient is my passion. When i imagine a dish, first i cook it in my head and i try to imagine how it will taste like. if the ingredients will be in harmony, how can i make it technically and what side dishes would match well. what i have learnt from south-east asian cuisines is, that fresh ingredients are unbeatable. in nutrition, taste, look and color, crispiness and moistness. my recent goal is to use as many fresh herbs and veggies as possible. there are only a few dishes that i dont like, few type of seafood and seaweed. any other ingredient is on my horizon if i plan to create something new,cooking is my art.
