Mango Phirni

Soak rice for a half-hour. Drain water and grind coarsely till a grainy consistency like semolina. Make a paste of chopped mangoes reserving some for garnishing. Chop or slice thinly nuts. Heat ghee and milk in a heavy-bottomed pan. Add milk powder paste to the boiling milk and few chopped cashewnuts.

Add the ground rice paste to the boiling milk and stir continuously so that it does not burn underneath. Milk thickens as soon as it starts boiling. Add sugar and pinch of salt for balancing the sweetness. Add cardamom powder. Remove from flame and cool completely. Now add mango pulp and stir. Serve in earthen pots or bowls.

Garnish with chopped mangoes,nuts, raisins, rose petals or essence.Chill and serve delicious mango phirni as a dessert after lunch or dinner.
