This combination of freshly prepared tomato sauce with some fresh summer vegetables and fresh herbs with penne pasta and olives makes a delicious quick fix dinner when paired with garlic bread

Boil your pasta according to package instructions.

For the sauce: Blanch the tomatoes and puree them in a blender when they cool down.

Now Heat up a large non-stick pan on high flame, add olive oil and sauté garlic and onion until translucent.

Now add all bell peppers, carrots, salt and cook until veggies are cooked but not too soft.

Add the freshly prepared tomato sauce, black pepper, chilli flakes, hot sauce and cook well for 2 minutes.

Combine pasta, fresh basil, olives and veggies and mix well.

Add grated cheese, and mix, cover the pan for 5 minutes on low heat until cheese is melted and slightly gooey.
