Steps

Place the tiger nuts in a bowl and cover them generously with water to hydrate.

Let them soak for 24 hours. If the water level drops, add more as needed.

Drain the tiger nuts well.

Pour part of the water into a blender and add the tiger nuts. Blend, gradually adding more water as you go.

Once the tiger nuts are completely blended, strain the mixture. Place a strainer over a bowl and line it with a clean cotton or linen cloth. Pour the mixture through the cloth to catch any fine particles.

Gather the cloth into a ball and squeeze firmly to extract as much liquid as possible.

Pour the remaining water into the cloth and squeeze again until the tiger nut pulp is dry.

Add the sugar to the horchata and stir well until it dissolves.

Chill the horchata in the refrigerator for at least a couple of hours. Serve very cold.
