Cold Ramen Noodle Salad

This is a very popular summer dish in Japan and it’s called ‘Hiyashi Chūka (冷やし中華)’. I often crave it not only on a hot summer day. Toppings can be anything that you like, but traditionally popular toppings include thinly sliced Cucumber, thin Omelet, Roasted Pork or Ham, and Tomato. It is often served with Hot Mustard.
Cold Ramen Noodle Salad

Cooking Instructions

Toppings are better to be sliced or prepared into thin strips so that easy to eat with noodles. To make sauce, combine all ingredients and mix well.

Cook Ramen Noodles OR Chinese Egg Noodles as instructed. Basically cook noodles in rapidly boiling water until cooked ‘al dente’. Then drain, rinse in cold water, and drain well.

Place the drained cold noodles in a deep plate or bowl, arrange toppings, pour the sauce over and enjoy with Hot Mustard if you like it.

Other Topping Suggestions: Thinly sliced Carrot, Capsicum, cooked Seafood, Chicken, Wakame, etc.

I left out the fresh coriander (cilantro) leaves, which I don't like, and I think it came out pretty well. Sooo delicious!You don't have to have all the ingredients listed here. To make the salad look colorful and appetizing, it's a good idea to include both green and red ingredients. I recommend adding red and yellow bell peppers too.If you add in raw sweet onions instead of the regular onions here, you'll be able to enjoy their crispy texture. Ramen salad is available at many izakaya (Japanese gastropubs). I wanted to make it at home too! So I tried it at many restaurants, and experimented a lot to create an easy, one-plate recipe. My favorite combination is shabu shabu pork, sliced onion, blanched bean sprouts and sesame dressing.
