  • 17 ouncesbeef tenderloin
  • 1 tbspOlive oil
  • 1onion
  • 1orange bell pepper
  • 1 cupcanned tomatoes
  • to tasteSalt and pepper
  • 1/2 cuppitted olives
  • 2 tbspchopped parsley
  • 1 tspdried oregano
  • 4 ouncesred wine
  • 4 cupsbeef stock

    Season the slices of beef with salt and pepper.

  2. 2

    Heat oil in a cast-iron skillet.

  3. 3

    Sear the beef until brown.

  4. 4

    Add the minced onions and saute for 2 minutes.

  5. 5

    Add the orange bell pepper, dried oregano, pitted olives and saute for another minute.

  6. 6

    Add the red wine and let it simmer for 5 minutes.

  7. 7

    Stir in canned tomatoes and beef stock and bring to a boil.

  8. 8

    Reduce to a simmer and let it cook until tender for about 40 minutes.

  9. 9

    Season with salt and pepper.

  10. 10

    Add the chopped parsley and serve.

Hadn’t ever tried to make beef cacciatore before. I altered the recipe a lil bit and the red wine really made this dish a true cuisine.
