This dish came about because my younger brother loves curry so much. I secretly bought some curry roux blocks so I could make it for him, and decided to give it to him as a birthday present. Thanks to everyone on Cookpad for the great recipes!

Prepare all the ingredients. Wash the potatoes, onions, and carrot thoroughly, then cut them into bite-sized pieces.

Add the vegetable oil to a pot and sauté the pork and onions first.

Continue sautéing until the onions are soft.

Meanwhile, dissolve the curry roux blocks in hot water to make it easier to add to the pot later.

Once the pork and onions are cooked, add the carrot and potatoes to the pot.

Stir everything together, then add enough water to cover the ingredients. Simmer until the vegetables are tender, about 15-20 minutes. Stir the pot occasionally.

When the potatoes and carrots are soft, add the dissolved curry roux.

Taste and adjust the seasoning (I think it's not very spicy). If it's not salty enough, add a little salt and stir until dissolved. Serve with a soft-fried egg and fried chicken breast if you like.
