You can use either fresh bamboo shoots or canned bamboo shoots for this recipe. If using canned bamboo shoots, make sure they are not sour.

Sauté the coconut cream with the red curry paste over medium heat until fragrant. Add the chicken and cook until done.

In a separate pot, bring the coconut milk to a boil. Add the bamboo shoots and simmer for a few minutes.

Add the cooked chicken and curry mixture to the pot with the bamboo shoots and coconut milk.

Season with fish sauce and sugar to taste. Adjust the flavor as you like.

Top with red chili peppers and torn kaffir lime leaves. Serve hot.
