To make Pav Bhaji:
Heat oil in a pan. Add the butter pieces and onions.
Sauté the onions until golden brown, then add the ginger-garlic paste. Mix well.

Add the chopped bottle gourd and cilantro, and mix well. Next, add the chopped potatoes. Mash everything together thoroughly.
Add the chopped beetroot, salt, red chili powder, and pav bhaji masala. Mash and mix well.

Add the tomato puree.
Mix in the tomato puree, then add butter and cilantro. Let the bhaji cook, mixing all the vegetables together well.

Spread butter on the pav (bread rolls).
Sprinkle pav bhaji masala on the pav.
Toast the pav in a pan until golden brown.
Serve the hot pav bhaji with lemon wedges, onions, and green chilies.
