Ingredients

  • For the dough:
  • 2 1/2 cupsall-purpose flour (300 grams)
  • 1 1/2 tablespoonsgranulated sugar (21 grams)
  • 1 1/4 teaspoonsinstant yeast (4 grams)
  • 2/3 cupwater (165 grams)
  • 1 tablespoonlard (15 grams)
  • For the pastry oil dough:
  • 3/4 cupcake flour (100 grams)
  • 3 1/2 tablespoonslard (50 grams)
  • For the filling:
  • 10 1/2 ouncespork leg meat, diced (300 grams)
  • 4 1/2 ouncespork fat, diced (130 grams)
  • 1 teaspoonrice wine (5 grams)
  • 1/2 teaspoonsalt (3 grams)
  • 2 1/2 tablespoonssoy sauce (38 grams)
  • 1 1/2 teaspoonssugar (6 grams)
  • 1/2 teaspoonfive-spice powder (2 grams)
  • 1 tablespoonground black pepper (8 grams)
  • 1/2 teaspoonground white pepper (2 grams)
  • 1/2large egg, beaten
  • About 2 bunches green onions, chopped into 1/4-inch pieces (the more, the better)

Steps

    Knead the dough ingredients together until smooth. Cover with plastic wrap and refrigerate for 30 minutes.

    Mix the pastry oil dough ingredients until combined, then divide into 15-gram portions.

  3. 3

    Mix the filling ingredients well and divide into 10 equal portions.

  4. 4

    Divide the rested dough into 10 pieces, each about 50 grams. Wrap each piece of dough around a portion of the pastry oil dough. Roll into a ball, then use a rolling pin to flatten into a long strip and roll up. Repeat this process twice. Cover with a damp paper towel and let rest for 20 minutes.

    Flatten each dough piece into a circle, wrap with a portion of filling, and pinch to seal with the seam side down. Brush the tops with sugar water and coat with white sesame seeds.

  6. 6

    Bake at 430°F (top heat) and 390°F (bottom heat) for 20 minutes, until golden brown. Enjoy!
