Alhamdulillah.. Eid el Adha is around the corner. It is time that is characterised by slaughtering of sacrificial animals, especially ram. This is a simple recipe of fried ram meat (mutton).
May we be among those who will witness the Eid and beyond in health and wealth.

PLEASE NOTE
1. There are many variations of preparing fried ram especially during Eid. Some believe that the meat should not be washed or should be washed once so as to retain all the taste and flavour of the meat. I always wash mine several times and I honestly do not see any difference in the taste. I believe it's more hygienic. But it's your choice.
2. You may choose to marinate the raw meat for extra flavour.
3. Chilli powder (yaji) is also a spice I use liberally when preparing any meat dish.
4. Some people do not add water to the meat throughout the cooking process but rather allow the liquid in the meat to cook it. It is usually tastier when prepared this way, but it you want very soft meat, it is better to add water so that it cooks properly.
5. Do not allow all the liquid to dry up If you want moist fried mutton. Drain from the liquid only when you are ready to fry it. This gives you a very tender and juicy outcome.
6. For best results, sprinkle the yaji while the fried meat is still hot.

Ingredients

  • Ram meat (Mutton)
  • Onions (lots and lots of it)
  • CubesSeasoning
  • Spices (especially ginger powder, garlic powder, curry nd thyme)
  • Fresh ginger and garlic (mince or pound)
  • Ground chilli pepper (yaji/barkonu)
  • Vegetable oil
  • Water

Steps

    Wash meat to remove dirt. Put in a pot. Add in cut onions, spices of choice, seasoning cubes, fresh ginger and garlic, yaji and water. Stir.

    Close lid and put on heat source.

  3. 3

    Check and stir occasionally.

  4. 4

    Turn off heat source when the water has almost dried off. Please do not allow it to dry off completely. You can put in more water if you want to use the broth, but that means you may have to increase quantity of seasoning.

    Put a deep frying pan on heat source. Add in vegetable oil and some cuts of onion.

    Allow to heat up.

  7. 7

    Transfer the quantity of meat that is enough for one batch to a colander. Drain briefly and transfer immediately to hot oil.

    Fry.

  9. 9

    Transfer to a different colander when fried to drain excess oil. Put in a bowl and sprinkle yaji (chilli powder). Toss. You have to be fast in this step because the yaji will stick more to the meat when it's hot and still a bit moist with the oil.
