Steps

Cook the pork shank with the bay leaves and salt in a pressure cooker or regular pot.

In another pot, cook the tomatoes with the chiles. Once cooked, blend them with the garlic and some of the cooking water.

Clean, chop, and rinse the purslane thoroughly.

Once the meat is ready, add the sauce and purslane to the pot. Let it boil, check the salt, and simmer for another 10 minutes. Turn off the heat and enjoy. Serve with lime for extra flavor—it's delicious!
