Steps

Soak tamarind in water. Dry roast fenugreek seeds and powder.

Keep all ingredients ready. In a pressure cooker, add gingely oil and mustard seeds wait till it cracks. Soak the curmt brinjal water to avoid discoloration.

Next add cumin seeds and pepper followed by onion and curry leaves. Saute till golden brown.

Add ginger and garlic paste saute till raw smell disappears.

Then add chilli powder and turmeric powder.

Add tomatoes and cook till mushy. Add the brinjal, salt and mix well.

Add the tamarind extract and the crushed fenugreek powder. Pour ¼ cup water(100ml approx).

Cook for 1 whistle and lower flame and keep for 3 minutes. Finally garnish with coriander leaves.
