10 minute ham & spinach gnocchi

This is a really quick meal I put together based on recipe adapted from "Economy Gastronomy: Eat well for less". I give the ingredient volumes I used in making a quick meal just for me, with the ingredients I had available, and suggestions for others I might have tried. The original recipe included a tin of tomatoes, which would have taken more time to reduce, so I replaced this with a few fresh tomatoes, as there are plenty in the greenhouse currently.

Ingredients

10 minutes
1 - simple to increase for more
  • 1 tbspolive oil
  • 1/2red (or yellow) pepper, finely chopped
  • 6-8cherry tomatoes, chopped into quarters
  • 1spring onion, thinly sliced
  • 1-2 tsppaprika (according to taste)
  • 2medium mushrooms, roughly chopped
  • 3-4 slicesham, roughly chopped
  • handfulbaby spinach, chopped (or other green leaves)
  • 8-10green beans (dwarf beans, French beans or similar)
  • 100-125 ggnocchi
  • grated Parmesan

Steps

10 minutes
  1. 1

    Boil water for the beans and gnocchi in a small pan

  2. 2

    Heat the oil in a heavy frying pan or wok, and fry the pepper until it starts to colour slightly.

  3. 3

    Add chopped tomatoes, spring onion and paprika to the pepper, and leave to simmer gently.

  4. 4

    Drop the green beans into the boiling water in the second pan, and add gnocchi about two minutes later. Generally, the beans need about 5 minutes and the gnocchi about 3 minutes. Drain when tender.

  5. 5

    Add the mushrooms to the tomato mixture, and cook for a couple of minutes to reduce. Then add the ham and spinach, and continue to heat briefly, just to gently warm the spinach so that it doesn't get soggy.

  6. 6

    Drain the beans and gnocchi, and pour onto a warm shallow bowl. Add the sauce and stir.

  7. 7

    Serve with grated Parmesan and enjoy
