I had some homegrown lettuce and cherry tomatoes which needed using so I made this simple but refreshing salad.

Ingredients

1lettuce, shredded
Handfulcherry tomatoes, cut in half
Small onion, sliced thinly
Juice of 1-2 lemons or vinegar
Sugar to taste (I used about 1 1/2 tbsp)
to tasteSalt
1drizzle of olive oil

Steps

Mix the sugar with the lemon juice or vinegar until its fully dissolved and almost syrup like. Add a drizzle of olive oil and mix well.

In a bowl coat the lettuce leaves well with the liquid.

Add the tomatoes and onion. Season with salt. Stir well and serve.
