Ingredients

  • 1cucumber,peeled,halved lengthwise,and seeded
  • 1 cup (250 ml)plain Greek Yogurt
  • 2 tbsp.extra-virgin olive oil
  • 1/4 cup(about 60ml) minced fresh cilantro,parsley,or mint
  • 1garlic clove,minced
  • Salt and pepper

Steps

    Using food processor fitted with shredding disk,process cucumber until shredded.Whisk yogurt,oil,cilantro (Coriander),and garlic together in medium bowl.Stir in cucumber and season with salt and pepper to taste; refrigerate until ready to serve.

Have not made it before,am tempted too make a Mint flavoured One - the Cookery Book that I got the Recipe from mentions using Cilantro (Coriander),I substituted the Word Cilantro for the Word Mint.
Have bought a creamy Mint Sauce from my Local Indian Takeaway,have in the Past went too this Takeaway and bought Onion Bhaji's with the bought Creamy Mint Sauce was delicious,so the Recipe of my given Sauce will probably be delicious as well.
