Soak Kesar strands in 2 tsp of warm milk.

In a mixie grind together sugar and coconut. If you find it difficult to grind, you can add little curd to the above mixture. Remember, dont add any water or milk while grinding it.

Now, whisk curd a little. Do not whisk too much otherwise, it's consistency will change.

Add coconut-sugar paste, dudh masala and soaked kesar. Mix well.

Your Creamy Coconut Shrikhand is ready. If you want you can keep Shrikhand 2 hours in fridge, to make it more thick.
