Ingredients

  1. 1 pckgfettuccine
  2. about 4 cupssmall tomatoes
  3. to tastecoconut oil
  4. 4 clovesgarlic (or more)
  5. to tasteyellow and/or red pepper
  6. to tastemushrooms
  7. to tastesalt and pepper
  8. to tastespinach
  9. about 2 tbsptomato paste
  10. to tasteProvence herb mix (rosemary, thyme, oregano, marjoram) (basil?)

Cooking Instructions

  1. 1

    Heat up the oil and start frying peppers. At same time boil water and add fettuccine.

    Add mushrooms, then garlic and cook until about 3/4 done. Add some spice and salt and pepper.

  3. 3

    Add tomatoes and cook until they start to fall apart. Add more spice and salt and pepper

  4. 4

    Add spinach and cook until wilted.

  5. 5

    Add pasta to frying pan and toss. Add tomato paste and more spice if required to your taste.

    Serve with parmesan cheese
