Ingredients

30 minutes
4 servings
  • 20Arbi leaves(arbi ke patte)
  • ForAloo vadi batter:
  • 1 tspcoriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 2 tspsugar
  • As per taste Salt
  • As required Water
  • 3 cupGram flour
  • Fortempering alu vadi:
  • 2 tspsesame seeds
  • 1 tsp mustard seeds
  • PinchAsafoetida
  • 1 tbsp oil
  • 3-4 spoonssugar syrup

Steps

  1. 1

    Rinse the arbi leaves well and wipe them dry.

    Take all the ingriedients for the batter in a mixing bowl and mix well to make a thick batter. Add some water if required.Check the taste and add more salt or sugar if required.
    The batter has to be really thick.

    For the first roll use 10 leaves and for the second roll use remaining 10 leaves.Now spread the batter on each leaf and arrange them.Roll the edges vertically and spread some batter on them.Now roll horizontally and tightly.Keep on applying the batter on each fold as you roll.

    Place the rolls on a greased steamer pan.
    Steam the rolls for 20-25 minutes.
    When warm or cool, slice them and temper them. boil half cup water and add sugar and make a thick syrup..
    For tempering heat oil in a pan. pop the mustard seeds

  5. 5

    Then add the sesame seeds,and asafoetida. saute for a few seconds.
    Then add the sliced rolls and saute till they get browned.
    You can also just pour the tempering mixture on the sliced rolls. Now add thick sugar syrup..Serve the alu vadi or patra hot or warm. you can also garnish the alu vadi with coconut and coriander,,mixing them with the rolls.sweet alu vadi is ready now..
