Soak the chickpeas in water for about 10 to 12 hours beforehand.

Place the soaked chickpeas in the slow cooker, cover with water, add a splash of oil, and then add all the vegetables (cut into large pieces).

Mix well and cover. Cook on LOW for 10 hours.

If you like, blend the broth with the vegetables to make it thicker. I even had enough left over for another meal the next day.
