This is a healthy recipe as it contains lots of vitamins and minerals that help for a healthy living, it can be eating alone or served with other dishes such as boiled rice, boiled potatoes or boiled yam.

For the green leafy vegetable you can use any, such as broccoli, spinach, cabbage, ugo leaves, e.t.c I used a vegetable called "kafi doctor" in hausa language, but I don't know the English name, the ingredients are shown below;

In a clean pan, pour in 4 tablespoon of oil, add onion and saute until translucent

Now add in your shredded green vegetable and saute for three minutes

Add in the diced onion, shredded capsicum, red pepper, onion and scotch bonnet, continue stirring until translucent

Now add in your spices and stir, you can add few drops of water if the green vegetable you're using is hard, allow to cook for two minutes

Serve and enjoy
