Ingredients

3 servings
  • 12 ozpork steak (about 350 grams)
  • 1pasilla chile
  • 2guajillo chiles
  • 2arbol chiles
  • 2allspice berries
  • 2whole cloves
  • 1 teaspoonground cinnamon
  • as neededwater, vinegar, or lime juice
  • chicken bouillon powder, to taste
  • garlic, to taste
  • black pepper, to taste
  • as neededhibiscus leaves (jamaica)
  • as neededcilantro
  • as neededpineapple
  • 2onions
  • 2avocados
  • 1tomatillo
  • cumin, to taste
  • as neededred tomato
  • as neededancho chile
  • as neededchipotle chile

Steps

  1. 1

    First, soak the chiles in hot water for 5-10 minutes to rehydrate. Remove them, then blend them (with water or vinegar) along with the other ingredients, except for the hibiscus leaves.

    Once blended, and after washing the pork steaks, add a little more salt and pepper, and squeeze in a lime (if you used water instead of vinegar). Add some of the blended mixture to the pork and refrigerate for about two hours or overnight.

    Do the same with the hibiscus leaves: after washing and drying them, add half of the blended mixture and refrigerate.

  4. 4

    While the meat is marinating, make the guacamole. Blend the avocados, half an onion, 1 tomatillo, and a handful of cilantro. Add salt and pepper, and blend. If you want it spicy, add a green chile or habanero. Leave the seed in and add a few drops of lime juice to keep it from turning brown.

  5. 5

    Once the meat is marinated, cook the pork and the marinated hibiscus leaves in a skillet or on a griddle. Chop the cooked pork.

  6. 6

    Serve the pork in tortillas with hibiscus leaves, onion, cilantro, pineapple, and guacamole. Enjoy!
