Steps

Wash seppankilangu 2 to 3 times in running water. Boil for 1 whistle in a pressure cooker. Peel the skin after it comes to room temperature. If we peel the skin immediately after opening the cooker then it will be too sticky. Cut the seppankilangu.

Deep fry it or shallow fry it in oil. Fry it until the seppankilangu turns golden brown.

Heat another Kadai. Add 2 tbsp of oil, 1 tsp mustard, few curry leaves.
Simmer the flam and then add salt to taste,1 to 2 tsp of red chili powder and turmeric powder. - 4
Then add deep fried seppankilangu to that masala. Saute it till the roasted seppankilangu gets completely coated with masalas. Garnish with chopped coriander leaves. Arbi or Seppankilangu roast is ready to serve.
