First of all pasteurize eggs. Fill water in a pan and heat. When it's just hot to touch not boiling, place eggs in it for 10 secs and remove. Eggs are pasteurized now.

In a mixer jug or immersion blender jug add eggs

Add salt.

Add lemon juice.1 tbsp

Add vinegar.

Add sugar.

Blend well

Now slowly drip oil while blending it. Don't add oil at once. Just make a continuous drip of oil.

It will start thickening. Beat until all the oil os incorporated.

Mayonnaise is ready.

Store in an airtight container.

Keep in fridge. Use within 14-18 days.
