Ingredients

50 minutes
Serves 5 servings
  • For the meatballs:
  • 14 oztextured soy protein (pre-soaked and well rinsed) (about 400 grams)
  • 1 cupcooked rice (about 200 grams)
  • 1 tablespoonwhole wheat flour (about 8 grams)
  • 1 cupwhole wheat breadcrumbs (about 60 grams)
  • As needed, onion, diced
  • As needed, parsley
  • For the sauce:
  • As needed, oil
  • 1garlic clove
  • 1 pinchfresh oregano
  • Black pepper, freshly ground, to taste
  • Salt, to taste
  • 10medium tomatoes, cooked
  • Chipotle pepper, to taste
  • As needed, cooked red bell pepper
  • 1bay leaf

Steps

50 minutes
  1. 1

    For the meatballs:
    Soak the textured soy protein in twice as much water for about 20 minutes to hydrate.

  2. 2

    Once hydrated, rinse well until the water runs clear.

  3. 3

    Drain and squeeze the soy protein very well, then blend or process the textured soy protein, 1 tablespoon of whole wheat flour, and the whole wheat breadcrumbs in a blender or food processor.

  4. 4

    Once you have a moist, uniform mixture, add the diced onion, parsley, and the cup of cooked rice.

  5. 5

    Season with salt and pepper, then knead the mixture by hand until you can form firm balls.

  6. 6

    Shape the mixture into meatballs and set aside.

  7. 7

    Heat oil in a skillet over medium heat and fry the meatballs.

  8. 8

    Drain the meatballs on paper towels and set aside.

  9. 9

    For the sauce:
    Blend the cooked tomatoes, chipotle pepper, and cooked red bell pepper until smooth.

  10. 10

    Sauté the chopped garlic and chopped onion in a pan.

  11. 11

    Pour in the tomato sauce, bring to a boil, and season.

  12. 12

    Add the meatballs, let them cook for a few minutes, remove from heat, and serve.
