A very popular Indian dish ... used in various parts of India ..
Steps

Firstly take a pan or wok, add 1 tbsp oil, heat it.

Now add baingan pcs & garlic cloves, add lil salt & lil oil again, cover it with the lid, cook it at low flame till baingan becomes tender & also light brown.

Place baingan upside down so that it is roasted nicely.

Stop the flame, let it cool.

Now peel baingan, get the pulp.

Take a pan, add oil, heat it.

Now add onion, sauté it at high flame till pink, do not over cook it.

Add tomato & green chilli, stir fry it for a while. Add salt also, stir it.

Now add baingan, mix it well, so that garlic incorporates.

Cover it with the lid, lower the flame, cook it until water evaporates. Stir in between.

Remove the lid, fry it at high flame for a while.

Add dhania patta, stir it for a while.

Remove it from the flame, take out in a serving bowl.

Have it with Roti or Paratha.
