This recipe is one I always keep under my belt, one of my father's homely remedies. My winter booster full of antioxidants to fights those bugs as I call my "bugsbusters". Its something that has to be made at least twice a year. Full of good health benefits as well as a great accomplishment to several dishes.

Spiced Pickled Lemon
This recipe is one I always keep under my belt, one of my father's homely remedies. My winter booster full of antioxidants to fights those bugs as I call my "bugsbusters". Its something that has to be made at least twice a year. Full of good health benefits as well as a great accomplishment to several dishes.

Steps

Wash and cut the lemon either in quarters or halves.

Generously cover all the open sides of the cut lemon pieces with salt.

Using a kilner or any other sealed jar carefully arrange the lemon inside.

Sprinkle with sugar followed by the chilli flakes if using.
- 5
Carefully press the lemon in the jar keeping them tight inside. Don't worry as they will slowly sit nicely in the jar once left to pickle.

Clip on the jar and cover. Leave to pickle on the table top.

Every other day gently move the jar in order to allow overall mixing and pickling.

Enjoy after a few weeks.
